German chef Johannes King jets into Niyama to host two exclusive five-course dinners. Owner of the Michelin-starred Söl’ring Hof, Chef Johannes will serve modern European cuisine paired with a selection of wines in a stunning setting 500m out in the middle of the Indian Ocean.
Chef Johannes began his career at the prestigious Franz Keller restaurant in Cologne specializing in French nouvelle cuisine. He then trained under master pastry chef Karl Schumacher at Vienna’s Konditorei Oberlaa, perfecting the traditional desserts for which the café is renowned. Chef Johannes relocated to Berlin to work at Henri Levy’s Michelin-starred restaurant, Maître, then joined the culinary team at the InterContinental in the upscale Tiergarten area.
Chef Johannes found his passion for fresh, seasonal, locally sourced dishes at Hôtel de la Poste on the Côte D’Or, known for its regional Burgundian cuisine. His experience here inspired him to open his own destination restaurant in 2000. Söl’ring Hof on the island of Sylt commands two Michelin stars and 17 Gault Millau points. Gourmands from far and wide have made the pilgrimage to the island to taste Chef Johannes’ modern textures and light flavors in a surreal landscape.
For two evenings only, on 29 January and 2 February 2018, Chef Johannes will bring the cuisine of Söl’ring Hof to Niyama’s Edge. Edge is a modern, fine dining paradise accessible only by speedboat. Set out over the lagoon tinged with the hues of sunset, Edge offers wrap-around seating under a billowing white canopy and sits above the Maldives’ only underwater playground, SubSix. Across Niyama’s two islands, Play and Chill, guests are treated to one-of-a-kind epicurean adventures, from Asian avant-garde cuisine in the treetops to South American barbeque deep in the jungle.
Six Senses Laamu is pleased to announce the opening of new dive center – Deep Blue Divers – owned and operated by the resort. By creating Deep Blue Divers, the resort will offer guests premier diving experiences in the lively and colorful reefs surrounding the resort and at the same time focus on enhancing guest awareness, appreciation and understanding of the marine environment.
The international team at Deep Blue Divers is staffed by 10 dive instructors and divemasters who can speak a total of 10 languages and who offer PADI courses and guide daily dive trips. The dive center is certified by PADI and has received the PADI Green Star Award from its first month of operation. Deep Blue Divers has also partnered with Project Aware who has listed them as 100% AWARE. Both these recognitions have followed the dive center’s commitment to marine conservation and sustainable dive practices, which include the protection of marine life, no anchoring of boats, sustainable cleaning products and continuous support to the Resident Marine team and to the research of the onsite team of the Manta Trust and the Blue Foundation.
Snorkeling equipment, including masks, fins and snorkels, is offered to all guests on a complimentary basis. The house reef is the most popular spot for snorkelers, as they can explore its busy marine life. Guests can also enter the water off the stairs of the Chill Bar and follow the reef slope.
The resort is surrounded by a large variety of coral reefs to which guests can dive, based on their level of dive experience. For beginners the House Reef is beautifully sloping with three pinnacles standing just a few meters away, and is home to the resident Green turtles and many colorful reef fish. Inner reefs are a 10 to 20-minute boat ride away and each has its own unique features such as black coral walls, caves and anemone gardens. In the outer reefs, divers can cruise or drift along loping reef walls where friendly reef sharks and turtles usually pass by. The larger marine life, such as grey reef sharks, eagle rays, huge schools of snappers, and barracudas reside in the channels. At Manta Point (also known as Hithadhoo Corner), there is a manta ray cleaning station just five minutes away from the resort. Here guests can observe the resident manta ray population all year round, along with reef sharks, turtles and a huge diversity of marine life. Both the channel and the Manta Point dives are recommended for experienced divers only.
For those who wish to learn how to dive with Deep Blue Divers, the dive center offers PADI courses and Open Water, Advanced Open Water, Rescue Diver and Divemaster certification. For younger adventurers who would like to explore the secrets and beauty of the underwater world the Bubblemaker course is available for children between eight and 10 years, while the Discover Scuba Diving course is for children from 10 years and above. A Nitrox speciality course along with a set of specific courses is also available such as the Manta Trust Specialty course, the Turtle and the Maldivian Shark and Ray course. For these courses, aside from diving, guests can learn more about these marine critters and how to protect them.

Six Senses Hotels Resorts Spas announces the appointment of Julian Crane as director of sales & marketing, Six Senses Laamu Maldives and Seychelles. He brings to the role more than 20 years of international experience in the high-end hospitality sector.
Julian joins Six Senses from his previous role of director of marketing for Four Seasons Hotel Doha. He originally joined Four Seasons in 1993 at the Regent Kuala Lumpur as front desk manager before moving into sales. He then became director of sales in the Four Seasons properties in Chiang Mai, Tokyo and Sydney before becoming director of marketing in Damascus and then Doha.
The broad experience of his hotel career began in 1990 as a trainee at The Ritz Hotel London. He then joined the opening team of the Sheraton Towers in Melbourne as a guest service agent before joining Four Seasons.
Julian holds a Marketing Diploma from the Chartered Institute of Marketing (CIM) UK and a Bachelor of Arts (Hons) – Hotel and Business management from Portsmouth University, UK. In addition to his native English language, he also speaks Chinese (Hokkien dialect).
Julian is accompanied by his wife, Sandra and their two children. He will be based at the Six Senses home office in Bangkok.

In July 2016 the Resident Marine Biologists at Six Senses Laamu implemented a new code of conduct on how to sustainably snorkel and dive with turtles, ensuring that every encounter is a positive interaction and that it does not affect the natural behavior and movements of the turtle. With this in mind, they began compiling a database of turtle sightings from the dive and snorkel sites around the Laamu Atoll, via a simple photographic identification process.
Today, on World Turtle Day, Six Senses Laamu celebrates the identification of 100 different Hawksbill turtles on the atoll’s reefs.
This identification process allows the Marine team to closely monitor the population of both Green and Hawksbill turtles in the surrounding waters. Due to key members of the team being both dive and photography enthusiasts there are available sighting records dating back as far as 2013. Of the 800+ total sightings, only 240 are of Hawksbills. The most re-sighted Hawksbill is Mia with 20 sightings.

Hawksbill turtles are located worldwide and are easily distinguished from other sea turtles by their sharp curving beak and serrated edge to the rear of their shell. Like all sea turtles they spend the first 20 or so years of their life in the open ocean feeding predominantly on jellyfish. Therefore when they come to live in coral reef habitats they change their diet, and start feeding on sponges, algae, coral, and small crustaceans instead.
Hawksbill turtles are listed as Critically Endangered by the International Union for Conservation of Nature (IUCN) Red List. This is partly due to their shell being used for thousands of years for decoration purposes, but in the 1900s their population was estimated to drop by 80 percent. As air-breathing reptiles turtles are at great risk of drowning in fishing gear. In addition to this, with jellyfish as their main food source in the open ocean, plastic pollution is a major problem. In the present day, they are protected by the Convention on International Trade in Endangered Species of Wild Fauna and Flora (CITES) but much is still needed to conserve populations.
Six Senses Laamu aims to increase awareness of turtles and conservation measures to protect them and the habitats in which they live. Hawksbill turtles play a key role in the coral reef ecosystem. There are few animals that eat the fast-growing sponges due to the toxins in their tissue; therefore they allow coral and other species to colonize and grow in the gaps they create. This maintains diversity throughout the reef ecosystem.
Guests diving or snorkeling on the surrounding reefs are encouraged to take photos of turtles they come across and if they find a newly spotted turtle, they may get a chance to give it a name.
Six Senses Laamu features an organic garden where 40 different herbs, vegetables, salad leaves and micro-herbs are grown. Chef Martin and his culinary team have teamed up with the gardeners to create a daily-changing menu, entirely based on fresh and organic ingredients, served by the pool at Sip Sip.
The menu features a different starter, salad, pizza and dessert every day for guests to choose from. “The idea is to offer guests an additional healthy set of light dish options to enjoy by the pool with locally sourced ingredients. Everything is prepared simply with no addition of processed or modified foods,” says Martin, executive chef.

Mixed lettuce Baby spinach Micro herbs Three carrot slices Sliced red radish Four avocado slices Lemon Juice Extra virgin olive oil Salt and pepper Flaxseed cracker
Wash and picked lettuce, spinach and micro herbs.
Make the dressing by mixing lemon juice, salt and pepper, slowly pour the olive oil.
Dress the lettuce and avocado, arrange in the bowl, garnish with micro herbs and flaxseed cracker.
For the flaxseed crackers
50 grams golden flaxseed
60 ml water
Pour the water over the flaxseed, mix and stir thoroughly.
Leave to sit for 10 to 15 minutes, stir regularly until the mix becomes thickened.
Spread the mix thinly over one dehydrator tray and score lightly with a spatula.
Dry for 12 to 36 hours.

For the fourth consecutive year, Kurumba Maldives celebrated International Children’s Day 2016 by welcoming 30 Maldivian children from the orphanage “Kudakudhinge Hiyaa” residing in Villingili island. Aged 9 to 16 years old, the children enjoyed an exciting afternoon at the Resort.
After a fun speedboat ride from Villingili island to Kurumba, the children were welcomed at the Conference Hall by Kurumba Maldives’ Bodu Beru team, who performed a few songs for them. Then the children enjoyed a delicious buffet and sweet treats prepared by Kurumba’s team of chefs, whilst some of our team members sang and danced for them. This encouraged the children to do the same in return. This was then followed by a Magician Show and fun team games, accompanied by Kurumba’s mascots.

The Kudakudhinge Hiyaa orphanage, located on Villingili and Hulhumalé islands, hosts children between the ages of 6 months and 21 years old. This is a self-supporting service that requires help from the community and industry in order to continue providing a caring, safe and educational environment for these children.

Kurumba Maldives has established a scholarship programme to assist Maldivians who plan to continue their education in college. Under this programme, Kurumba provides scholarship grants to two graduated high school students, to enable the recipients to complete a 3 year graduate programme in Hospitality & Hotel Administration at an accredited institution of the resort’s choice in India.
This scholarship is eligible to Maldivian citizens and permanent residents who have passed in 10+2 system of Senior Secondary School examination or its equivalent from a recognized Institution with English as one of the subjects, securing not less than 50% marks in aggregate. Those appearing in qualifying exam can also apply on provisional basis. Provisional admission will be cancelled on non-submission of having passed the qualifying examination at the time of admission or latest by 30th September 2016.
Graduates with challenging life conditions and with a higher level of aptitude and attitude will be preferred.
Age limit: Not more than 22 years as of 1st July 2016.
